Ingredients
- Boneless chicken (breast or thighs)
- Canned black beans
- Cajun seasoning
- Bell peppers
- Onions
- Tortillas (flour or corn)
- Shredded cheddar or pepper jack cheese
- Fresh herbs (cilantro or parsley)
- Lime
- Avocado (optional)
Instructions
- Dice the chicken into bite-sized pieces. Chop the bell peppers and onions.
- In a large skillet, heat olive oil over medium heat. Sauté chopped onions and bell peppers until soft, about 5 minutes.
- Add the diced chicken and Cajun seasoning. Stir until the chicken is cooked through, approximately 7–10 minutes.
- Rinse and drain the black beans, add them to the skillet, and simmer for another 2–3 minutes.
- Warm the tortillas in a separate pan or microwave. Place a scoop of the chicken and black bean mixture in the center of each tortilla, adding cheese and herbs if desired.
- Fold in the sides and roll the tortilla tightly. Toast the burritos in the skillet for added crunch, if preferred.
- Cut the burritos in half and squeeze lime juice on top. Garnish with cilantro or avocado slices.
Notes
For a vegetarian option, substitute chicken with sautéed mushrooms or tempeh. Whole-wheat tortillas can add extra nutrients.
