Ingredients

  • Boneless chicken (breast or thighs)
  • Canned black beans
  • Cajun seasoning
  • Bell peppers
  • Onions
  • Tortillas (flour or corn)
  • Shredded cheddar or pepper jack cheese
  • Fresh herbs (cilantro or parsley)
  • Lime
  • Avocado (optional)

Instructions

  1. Dice the chicken into bite-sized pieces. Chop the bell peppers and onions.
  2. In a large skillet, heat olive oil over medium heat. Sauté chopped onions and bell peppers until soft, about 5 minutes.
  3. Add the diced chicken and Cajun seasoning. Stir until the chicken is cooked through, approximately 7–10 minutes.
  4. Rinse and drain the black beans, add them to the skillet, and simmer for another 2–3 minutes.
  5. Warm the tortillas in a separate pan or microwave. Place a scoop of the chicken and black bean mixture in the center of each tortilla, adding cheese and herbs if desired.
  6. Fold in the sides and roll the tortilla tightly. Toast the burritos in the skillet for added crunch, if preferred.
  7. Cut the burritos in half and squeeze lime juice on top. Garnish with cilantro or avocado slices.

Notes

For a vegetarian option, substitute chicken with sautéed mushrooms or tempeh. Whole-wheat tortillas can add extra nutrients.
