Burrata Pasta Shells

Description

Delicious burrata pasta shells filled with creamy cheese, sautéed mushrooms, and topped with tomato sauce and Parmesan.


Ingredients

  • Large pasta shells
  • 8 oz burrata cheese
  • 8 oz fresh mushrooms (cremini or shiitake)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 cups tomato sauce
  • Fresh basil, for garnish
  • Fresh parsley, for garnish
  • 1/2 cup Parmesan cheese, grated

Instructions

  1. Boil a large pot of salted water and cook pasta shells according to package instructions. Drain and toss with olive oil.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds. Add chopped mushrooms and sauté until golden brown, about 7-10 minutes. Season with salt and pepper.
  3. Add tomato sauce to the skillet with mushrooms. Stir and let simmer for 5 minutes.
  4. Stuff each pasta shell with burrata and place in the sauce. Spoon additional sauce over shells.
  5. Preheat oven to 375°F (190°C). Top with Parmesan cheese and bake for 15-20 minutes until bubbly.
  6. Garnish with fresh herbs and serve.

Notes

For variations, feel free to substitute ricotta for burrata, or add sautéed sausage or chicken for extra protein.
