- 2 fresh peaches, sliced
- 1/4 cup bourbon
- 2 tablespoons honey
- 2 tablespoons soy sauce
- 2 cloves garlic, minced

Instructions
- Preheat your oven to 400°F (200°C).
- In a small saucepan, combine the sliced peaches, bourbon, honey, soy sauce, garlic, and black pepper over medium heat. Simmer for 5-7 minutes until thickened.
- Place the salmon fillets in a baking dish, drizzle with olive oil, and sprinkle with salt and pepper.
- Pour the bourbon-peach glaze over the salmon, ensuring it’s covered.
- Bake for 15-20 minutes or until the salmon flakes easily with a fork and the glaze is bubbling.
- Serve hot, drizzling any extra glaze over the top.

For a twist, substitute white wine for bourbon or use maple syrup to adjust the sweetness.
