- 4 boneless chicken breasts or thighs
- 1/2 cup unsalted butter, melted
- 4 cloves fresh garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- Juice and zest of 1 lemon
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, combine melted butter, garlic, lemon juice, zest, and chopped herbs. Whisk together to create the marinade.
- Place chicken in a baking dish and pour the marinade over it, coating each piece evenly. Marinate for at least 30 minutes.
- Bake the chicken for 25-30 minutes, or until fully cooked and tender.
- Broil for a few minutes for a golden finish.
- Let the chicken rest for 5 minutes before serving, drizzling with pan sauce.
Notes
For a vegetarian version, substitute chicken with firm tofu. Make sure to let the chicken rest before cutting to retain juiciness.
