- 6 slices thick-cut bacon
- 4 large eggs
- 1 cup shredded cheddar cheese
- 4 flour tortillas
- 2 tablespoons butter or oil
Instructions
- In a large skillet over medium heat, cook the bacon until crispy. Transfer to a paper towel-lined plate to drain, keeping a tablespoon of bacon grease in the skillet.
- Add beaten eggs to the same skillet and gently scramble until just set, then remove from heat.
- Lay a tortilla flat in the skillet, sprinkle half with cheese, add scrambled eggs and crumbled bacon, then top with more cheese before folding the tortilla over.
- Add a little butter or oil to the skillet and cook the quesadilla over medium heat until golden brown, about 3-4 minutes per side. Flip carefully with a spatula.
- Once crispy, slice into wedges and serve hot with salsa or guacamole.
Notes
For added flavor, consider adding sautéed vegetables or swapping cheese variants.
