Description

Delightfully crispy quesadillas filled with savory bacon, fluffy scrambled eggs, and gooey cheese, perfect for breakfast or brunch.


Ingredients

  • 6 slices thick-cut bacon
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 4 flour tortillas
  • 2 tablespoons butter or oil

Instructions

  1. In a large skillet over medium heat, cook the bacon until crispy. Transfer to a paper towel-lined plate to drain, keeping a tablespoon of bacon grease in the skillet.
  2. Add beaten eggs to the same skillet and gently scramble until just set, then remove from heat.
  3. Lay a tortilla flat in the skillet, sprinkle half with cheese, add scrambled eggs and crumbled bacon, then top with more cheese before folding the tortilla over.
  4. Add a little butter or oil to the skillet and cook the quesadilla over medium heat until golden brown, about 3-4 minutes per side. Flip carefully with a spatula.
  5. Once crispy, slice into wedges and serve hot with salsa or guacamole.

Notes

For added flavor, consider adding sautéed vegetables or swapping cheese variants.
