Ingredients
Scale
- 4 slices thick-cut bacon
- 1 lb lean ground beef
- 1 cup long-grain white or brown rice
- 1 sweet onion, diced
- 2 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 2 cups beef or vegetable broth
- Salt and pepper to taste

Instructions
- Cook the bacon in a large skillet over medium heat until crispy. Remove and drain on paper towels, reserving a tablespoon of drippings in the pan.
- Add diced onions and minced garlic to the skillet and sauté until soft and translucent, about 3-5 minutes.
- Add the ground beef, breaking it apart with a spatula. Season with salt and pepper and cook until browned, about 7-9 minutes.
- Stir in the rice, ensuring it coats all ingredients, then pour in broth. Bring to a boil, reduce to a simmer, cover, and cook for about 15-20 minutes until rice is tender.
- Remove from heat and fold in the crispy bacon and shredded cheese. Let sit for a minute, then fluff with a fork.
- Garnish with chopped herbs and serve hot.
