Ingredients
- Hearty bread (sourdough or whole grain)
- Ripe avocados
- Fresh large eggs
- Cremini or shiitake mushrooms
- Milk or cream

Instructions
- Preheat your oven to 375°F (190°C).
- Slice the bread into one-inch thick pieces and place them in a greased baking dish.
- Sauté the sliced mushrooms in olive oil until golden brown, seasoning with salt and pepper.
- In a bowl, whisk together the eggs, milk or cream, and seasonings.
- Layer the sautéed mushrooms and mashed avocado on each slice of bread, then pour the egg mixture over the top.
