- 1 cup apple cider
- 2 1/2 cups all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1 large egg
- 1/2 cup unsalted butter, softened
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
- In a larger bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy (3-5 minutes).
- Add the egg and apple cider to the butter mixture and mix until just combined.
- Gradually add dry ingredients to the wet mixture, stirring until a soft dough forms. Avoid overmixing.
- Scoop rounded balls of dough onto the prepared baking sheet, spacing them 2 inches apart. Optionally, sprinkle some coarse sugar or sea salt on top.
- Bake for about 10-12 minutes, until edges are golden brown and centers are set but still soft.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Chill the dough for 30 minutes before baking to prevent spreading. Use a cookie scoop for even sizes.
