Ingredients

  • 1 cup apple cider
  • 2 1/2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1 large egg
  • 1/2 cup unsalted butter, softened

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  3. In a larger bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy (3-5 minutes).
  4. Add the egg and apple cider to the butter mixture and mix until just combined.
  5. Gradually add dry ingredients to the wet mixture, stirring until a soft dough forms. Avoid overmixing.
  6. Scoop rounded balls of dough onto the prepared baking sheet, spacing them 2 inches apart. Optionally, sprinkle some coarse sugar or sea salt on top.
  7. Bake for about 10-12 minutes, until edges are golden brown and centers are set but still soft.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Chill the dough for 30 minutes before baking to prevent spreading. Use a cookie scoop for even sizes.
