  • 1 cup brown sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 ½ cups sweetened shredded coconut
  • 1 cup semi-sweet or dark chocolate chips
  • 1 cup sliced almonds

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch pan with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in a splash of vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and a pinch of salt; gradually add this to the wet ingredients.
  5. Gently fold in the shredded coconut, chocolate chips, and sliced almonds.
  6. Pour the batter into your prepared pan, spreading evenly, and bake for 25-30 minutes until golden brown.
