Ingredients

- 2 cups pasta (fusilli or penne)
- 1 ripe avocado
- 1/2 cup Greek yogurt
- 1/4 cup fresh basil leaves
- 1/4 cup fresh parsley leaves
- 2 tbsp lemon juice
- 1 clove garlic
- 1/4 cup olive oil
- 1 cup cherry tomatoes
- 1 cucumber
- 1/4 cup sunflower seeds
- Salt to taste
Instructions
- Cook the pasta until al dente, then drain and rinse under cold water.
- In a blender, combine avocado, herbs, Greek yogurt, lemon juice, garlic, and olive oil; blend until smooth.
- Chop the vegetables.
- In a large bowl, mix cooked pasta, vegetables, and dressing until evenly coated.
- Adjust seasoning and chill for at least 30 minutes.
- Serve with sunflower seeds on top.
Notes
For added protein, consider including grilled chicken or chickpeas. Adjust the acidity by adding more lemon juice to taste.
