Description

A vibrant and creamy pasta salad featuring fresh herbs and seasonal vegetables, perfect for gatherings and picnics.


Ingredients

  • 2 cups pasta (fusilli or penne)
  • 1 ripe avocado
  • 1/2 cup Greek yogurt
  • 1/4 cup fresh basil leaves
  • 1/4 cup fresh parsley leaves
  • 2 tbsp lemon juice
  • 1 clove garlic
  • 1/4 cup olive oil
  • 1 cup cherry tomatoes
  • 1 cucumber
  • 1/4 cup sunflower seeds
  • Salt to taste

Instructions

  1. Cook the pasta until al dente, then drain and rinse under cold water.
  2. In a blender, combine avocado, herbs, Greek yogurt, lemon juice, garlic, and olive oil; blend until smooth.
  3. Chop the vegetables.
  4. In a large bowl, mix cooked pasta, vegetables, and dressing until evenly coated.
  5. Adjust seasoning and chill for at least 30 minutes.
  6. Serve with sunflower seeds on top.

Notes

For added protein, consider including grilled chicken or chickpeas. Adjust the acidity by adding more lemon juice to taste.
