Description

Delicious bars made with fresh strawberries and a buttery crumble topping, perfect for any occasion.


Ingredients

  • 2 cups fresh strawberries, sliced
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract (optional)
  • 1/2 tsp cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8 inch baking dish by greasing it or lining it with parchment paper.
  2. In a bowl, combine sliced strawberries with 1 tablespoon of sugar and a squeeze of lemon juice. Set aside.
  3. In another bowl, mix melted butter, 1 cup of sugar, baking powder, and salt. Stir in flour until just combined.
  4. Press half of the mixture into the bottom of the baking dish, then spread the strawberries evenly over the crust.
  5. Mix oats and cinnamon into the remaining dough and crumble it over the strawberries.
  6. Bake for 35-40 minutes until golden on top and the strawberries are bubbling. Let cool for 20 minutes before slicing.

Notes

Serving suggestions include dusting with powdered sugar or serving with a scoop of vanilla ice cream.
