Delicious bars made with fresh strawberries and a buttery crumble topping, perfect for any occasion.
Ingredients

- 2 cups fresh strawberries, sliced
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1 cup old-fashioned rolled oats
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tsp vanilla extract (optional)
- 1/2 tsp cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8 inch baking dish by greasing it or lining it with parchment paper.
- In a bowl, combine sliced strawberries with 1 tablespoon of sugar and a squeeze of lemon juice. Set aside.
- In another bowl, mix melted butter, 1 cup of sugar, baking powder, and salt. Stir in flour until just combined.
- Press half of the mixture into the bottom of the baking dish, then spread the strawberries evenly over the crust.
- Mix oats and cinnamon into the remaining dough and crumble it over the strawberries.
- Bake for 35-40 minutes until golden on top and the strawberries are bubbling. Let cool for 20 minutes before slicing.
Notes
Serving suggestions include dusting with powdered sugar or serving with a scoop of vanilla ice cream.
