Ingredients

  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup heavy cream
  • 1/2 cup toasted pecans, chopped
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a saucepan, combine granulated sugar and water; swirl until dissolved. Boil until deep amber, then pour into the cake pan and set aside.
  3. Cream together butter and brown sugar until light and fluffy. Beat in eggs one at a time, then mix in vanilla.
  4. In another bowl, combine flour, baking powder, and salt.
  5. Gradually add dry ingredients to the butter mixture, alternating with heavy cream. Gently fold in pecans.
  6. Spoon batter into the cake pan and bake for 30-35 minutes, until a toothpick comes out clean.
  7. Cool for 10 minutes before inverting onto a serving plate.
  8. Garnish with more pecans or whipped cream if desired.

Notes

Watch the caramel closely to avoid burning. Allow the cake to cool properly before inverting for the best presentation.
