- 3–4 cups thinly sliced Vidalia onions
- 2 tablespoons butter
- 1 9-inch pie crust
- 3 large eggs
- 1 cup milk (or cream)
- 2 cups shredded sharp cheddar cheese
- Salt and pepper to taste
- Optional: 1 teaspoon fresh herbs (thyme or parsley)
Instructions
- Sauté the onions: Melt butter in a skillet over medium heat, add onions, season with salt, and cook until soft and golden, about 15-20 minutes.
- Prepare the crust: Preheat oven to 375°F (190°C). Fit the pie crust into a pie plate and pre-bake for 10 minutes.
- Combine the filling: In a bowl, whisk together eggs and milk. Add cheese, sautéed onions, salt, and pepper; mix well.
- Fill the crust: Pour the onion and cheese mixture into the prepared pie crust.
- Bake: Bake for 30-35 minutes until filling is set and top is golden brown.
- Cool and serve: Allow the pie to cool slightly before slicing; serve warm or at room temperature.
Notes
For best results, sauté onions on low heat and be careful not to rush the cooking process. This helps enhance their natural sweetness.
