Ingredients

  • 2 cups whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup Greek yogurt or cottage cheese
  • 1/4 cup cold unsalted butter, melted
  • 1 cup sautéed mushrooms
  • 1 cup fresh spinach
  • 2 tablespoons fresh herbs (thyme or rosemary)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt until no lumps remain.
  3. In a separate bowl, combine the Greek yogurt (or cottage cheese) and melted butter. Stir until smooth.
  4. Pour the wet mixture into the dry ingredients and mix until just combined.
  5. Fold in the sautéed mushrooms, spinach, and fresh herbs.
  6. On a lightly floured surface, turn the dough out and gently pat it into a rectangle about 1 inch thick. Cut out biscuits using a biscuit cutter.
  7. Place biscuits on the prepared baking sheet, brush with extra melted butter, and bake for 15-20 minutes until lightly browned.
  8. Let cool on a wire rack for a few minutes before enjoying warm.
