Ingredients

  • 1 cup granulated sugar
  • ½ cup sour cream
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup fresh strawberries, puréed
  • 1 ½ cups graham cracker crumbs
  • ½ cup butter, melted
  • ¼ cup sugar (for crust)

Instructions

  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs, melted butter, and ¼ cup sugar in a bowl. Press into a 9-inch springform pan and bake for 10 minutes. Let cool.
  2. In a mixing bowl, beat cream cheese until smooth. Add 1 cup sugar, sour cream, and vanilla; mix until creamy. Beat in eggs one at a time.
  3. Purée strawberries with ¼ cup sugar until smooth. Pour half the cheesecake mixture over the crust, drizzle with strawberry purée, then repeat. Swirl with a knife.
  4. Bake at 325°F (160°C) for 50-60 minutes until just set. Turn off the oven, crack the door, and let cool for 1 hour.
  5. Chill in the refrigerator for at least 4 hours or overnight before serving. Serve with fresh strawberries or whipped cream.
