- 15 Oreo cookies, crushed
- 4 oz cream cheese, softened
- 1/2 cup creamy peanut butter
- 1/4 cup granulated sugar
- 2 tbsp unsalted butter, melted
- 1 tsp vanilla extract
- Optional: crushed Oreos or melted chocolate for topping
Instructions
- Prepare the Oreo crust: In a medium bowl, mix crushed Oreos with melted butter until combined. Press into the bottom of mini muffin tray and chill.
- Make the cheesecake filling: Beat cream cheese until smooth, then mix in peanut butter, sugar, and vanilla until fluffy. Optionally fold in whipped cream for extra creaminess.
- Fill the cups: Spoon cheesecake mixture over crusts and smooth the surface.
- Chill and serve: Refrigerate for at least 3 hours until set. Optionally top with crushed Oreos or melted chocolate before serving.
Notes
Allow cream cheese to come to room temperature for easier mixing. Do not skip proper chilling time for best texture.
