- 1 pinch salt
- 1 cup buttermilk or yogurt
- 1 large egg
- Zest of 1 orange
- ½ cup unsalted butter, melted
- 1 cup fresh strawberries, chopped
- ½ cup flour (for streusel)
- ½ cup brown sugar (for streusel)
- ¼ cup melted butter (for streusel)
Instructions
- Preheat your oven to 375°F (190°C).
- Line a muffin tin with paper liners or grease them lightly.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, combine buttermilk, egg, and orange zest; add melted butter.
- Fold in chopped strawberries.
- Pour wet ingredients into dry ingredients; mix until just combined.
- For the streusel, combine flour, brown sugar, and melted butter until crumbly.
- Spoon muffin batter into prepared tins and sprinkle streusel topping over each muffin.
- Bake for 18-20 minutes, or until golden and a toothpick comes out clean.
- Cool for 5 minutes before transferring to a wire rack.
