Description

Deliciously fluffy muffins bursting with fresh strawberries and zesty orange, topped with a crunchy streusel.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 pinch salt
  • 1 cup buttermilk or yogurt
  • 1 large egg
  • Zest of 1 orange
  • ½ cup unsalted butter, melted
  • 1 cup fresh strawberries, chopped
  • ½ cup flour (for streusel)
  • ½ cup brown sugar (for streusel)
  • ¼ cup melted butter (for streusel)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Line a muffin tin with paper liners or grease them lightly.
  3. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  4. In a separate bowl, combine buttermilk, egg, and orange zest; add melted butter.
  5. Fold in chopped strawberries.
  6. Pour wet ingredients into dry ingredients; mix until just combined.
  7. For the streusel, combine flour, brown sugar, and melted butter until crumbly.
  8. Spoon muffin batter into prepared tins and sprinkle streusel topping over each muffin.
  9. Bake for 18-20 minutes, or until golden and a toothpick comes out clean.
  10. Cool for 5 minutes before transferring to a wire rack.
