- 2 1/2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 teaspoon peppermint extract
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Green food coloring
- 1 cup white chocolate chips (optional)
- 1 cup crushed peppermint candies
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs one at a time, and mix until combined. Stir in vanilla and peppermint extracts.
- In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add this dry mix to the butter mixture until well incorporated.
- Add green food coloring, a few drops at a time, mixing until you reach your desired green hue.
- If using, fold in white chocolate chips.
- Scoop tablespoons of dough onto the prepared baking sheets, leaving space between each cookie. Gently press crushed peppermint candies on top of each cookie.
- Bake for 8-10 minutes, until the edges are set but the centers remain soft. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For thicker cookies, chill the dough for 30 minutes before baking. Do not over-mix the dough once flour is added.
