  • 2 large Eggs

  • 1 cup Strawberry Filling
  • 4 oz Cream Cheese
  • 2 cups Confectioner’s Sugar
  • 1 tsp Vanilla Extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs one at a time, mixing well, then add vanilla extract.
  4. In another bowl, whisk together flour, baking powder, baking soda, and salt, then gradually add to wet ingredients.
  5. Fold in strawberry filling gently.
  6. Scoop rounded balls of dough onto prepared baking sheets, keeping 2 inches apart.
  7. Bake for 10-12 minutes or until edges are lightly golden.
  8. Cool on baking sheets for 5 minutes before transferring to a wire rack.
  9. While cooling, whip cream cheese with confectioner’s sugar until smooth and add a splash of vanilla extract.
  10. Once cooled, drizzle or spread cream cheese icing over cookies and garnish with sprinkles if desired.
