A rich and decadent chocolate cake topped with crushed pistachios and a luscious chocolate glaze, perfect for celebrations and gatherings.

- 2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup whole milk
- 1 cup chopped unsalted pistachios
- 1 cup dark chocolate (for glaze)
- 1/2 cup heavy cream (for glaze)
Instructions
- Preheat your oven to 350°F (180°C). Grease and line two 9-inch round cake pans with parchment paper.
- In a large bowl, sift together flour, cocoa powder, baking soda, and baking powder. Add a pinch of salt.
- In another bowl, cream together softened butter and granulated sugar until pale and fluffy.
- Gradually add the eggs, one at a time, mixing well after each addition, then stir in the vanilla extract.
- Alternate adding the dry ingredients and milk to the butter mixture, starting and ending with the dry mix. Fold in chopped pistachios.
- Divide the batter between the prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean.
- Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Melt dark chocolate and cream together in a bowl over simmering water, stirring until smooth.
- Assemble the cake by layering the cooled cakes with the chocolate glaze and remaining pistachios.
- Slice, serve, and enjoy!
Notes
For a lighter texture, you can use cake flour instead of all-purpose flour. Experiment with plant-based substitutions for a vegan version.
