Ingredients

- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1/4 cup cold unsalted butter, cubed
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cardamom
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- Zest of 1 orange
- 1/2 cup cream or milk
- 1 large egg, beaten
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the flour, baking powder, sugar, salt, and chai spices until well-combined.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Add the orange zest and mix to distribute evenly.
- In a separate bowl, mix cream and the beaten egg, then pour into the dry ingredients and stir gently until just combined.
- Turn the dough onto a floured surface and knead gently, then pat into a circle about 1-inch thick.
- Cut into wedges or use a biscuit cutter for round shapes and place them on the baking sheet.
- Brush the tops with additional cream and bake for 15-18 minutes until golden brown.
- Cool on the pan for a few minutes, then transfer to a wire rack to cool completely.
