- 8 oz chorizo, sliced
- 2 cans (15 oz each) chickpeas, drained and rinsed
- 1 onion, diced
- 4 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken or vegetable broth
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
- 1–2 bay leaves
Instructions
- In a large skillet over medium heat, add a drizzle of olive oil. Sauté onion until translucent. Add minced garlic and bell peppers, cooking until soft.
- Add sliced chorizo to the skillet and brown them, releasing flavorful oil.
- Add chickpeas and diced tomatoes, stirring to combine. Cook for about 5 minutes.
- Season with smoked paprika, cumin, thyme, salt, and pepper. Pour in broth, scraping any bits from the bottom.
- Bring to a gentle simmer, cover, and cook for 20-30 minutes, allowing flavors to meld.
- Before serving, stir in chopped parsley and adjust seasoning. Optionally add a squeeze of lemon.
Notes
Let the stew sit for a while before serving for enhanced flavors. Serve with crusty bread or a fresh green salad.
