Description

A warm, hearty stew combining spicy chorizo and creamy chickpeas with a medley of flavors and fresh herbs.


Ingredients

  • 8 oz chorizo, sliced
  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken or vegetable broth
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish
  • 12 bay leaves

Instructions

  1. In a large skillet over medium heat, add a drizzle of olive oil. Sauté onion until translucent. Add minced garlic and bell peppers, cooking until soft.
  2. Add sliced chorizo to the skillet and brown them, releasing flavorful oil.
  3. Add chickpeas and diced tomatoes, stirring to combine. Cook for about 5 minutes.
  4. Season with smoked paprika, cumin, thyme, salt, and pepper. Pour in broth, scraping any bits from the bottom.
  5. Bring to a gentle simmer, cover, and cook for 20-30 minutes, allowing flavors to meld.
  6. Before serving, stir in chopped parsley and adjust seasoning. Optionally add a squeeze of lemon.

Notes

Let the stew sit for a while before serving for enhanced flavors. Serve with crusty bread or a fresh green salad.
