Description

Deliciously soft and vibrant Red Velvet Whoopie Pies filled with a rich cream cheese filling. Perfect for any occasion!


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup vegetable oil
  • 1 cup brown sugar
  • 2 large eggs
  • 1 cup buttermilk
  • 1 tablespoon red food coloring
  • 8 ounces cream cheese
  • ½ cup softened butter
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  4. In another large bowl, beat together the vegetable oil, brown sugar, and eggs until smooth. Stir in the buttermilk and red food coloring until well blended.
  5. Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
  6. Drop batter onto the prepared baking sheet using a cookie scoop or tablespoons, leaving space in between.
  7. Bake for 10-12 minutes or until edges are set. Cool on the baking sheet for five minutes before transferring to a wire rack.
  8. Prepare the cream cheese filling by whipping together the cream cheese, butter, and powdered sugar until smooth.
  9. Once pies are cooled, spread the filling on one flat side and sandwich with another pie. Dust with powdered sugar if desired.
  10. Enjoy and store leftovers in an airtight container for up to three days.
