- 2 cups all-purpose flour
- 1 tablespoon cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup vegetable oil
- 1 cup brown sugar
- 2 large eggs
- 1 cup buttermilk
- 1 tablespoon red food coloring
- 8 ounces cream cheese
- ½ cup softened butter
- 2 cups powdered sugar
Instructions
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- In another large bowl, beat together the vegetable oil, brown sugar, and eggs until smooth. Stir in the buttermilk and red food coloring until well blended.
- Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
- Drop batter onto the prepared baking sheet using a cookie scoop or tablespoons, leaving space in between.
- Bake for 10-12 minutes or until edges are set. Cool on the baking sheet for five minutes before transferring to a wire rack.
- Prepare the cream cheese filling by whipping together the cream cheese, butter, and powdered sugar until smooth.
- Once pies are cooled, spread the filling on one flat side and sandwich with another pie. Dust with powdered sugar if desired.
- Enjoy and store leftovers in an airtight container for up to three days.
