- 1 store-bought or homemade pie crust
- 2 cups fresh mushrooms (e.g., button, cremini, shiitake), chopped
- 2 cloves garlic, minced (or 1 tsp garlic powder)
- 1 medium onion, finely chopped
- 2 cups spinach or kale, chopped
- 1 cup cream cheese or sharp cheddar cheese, shredded
- 3 large eggs
- 1 tbsp fresh thyme, chopped
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Roll out the pie crust and fit it into a 9-inch pie dish; trim excess and prick the bottom.
- In a skillet, heat olive oil, sauté chopped onions and garlic until fragrant.
- Add chopped mushrooms and sauté until golden, about 5-7 minutes; add greens at the end to wilt.
- In a bowl, mix sautéed veggies with cheese, eggs, herbs, salt, and pepper.
- Pour the filling into the prepared crust, smoothing it evenly.
- Bake for 30-35 minutes until the crust is golden and filling is set.
- Allow to cool for a few minutes before slicing and serving.
Notes
Brush the top of the pie with an egg wash for a golden shine. Let flavors meld for a richer taste. Avoid overcooking mushrooms to prevent sogginess.
