Ingredients

- 1 cup orzo
- 8 oz feta cheese
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Boil orzo in salted water until al dente, about 8-10 minutes; drain.
- Sauté garlic in olive oil until fragrant, then add spinach and cook until wilted, about 2-3 minutes.
- In a bowl, combine cooked orzo, sautéed spinach, lemon juice, and herbs.
- Transfer to a baking dish, crumble feta on top, and drizzle with olive oil.
- Bake for 20-25 minutes until feta is soft and slightly golden.
- Serve warm, garnished with black pepper or fresh herbs.
Notes
For variations, substitute orzo with quinoa and feta with goat cheese. Best served warm with a side salad.
