Description

A comforting dish combining creamy feta, earthy spinach, and nutty orzo, baked to perfection.


Ingredients

  • 1 cup orzo
  • 8 oz feta cheese
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Boil orzo in salted water until al dente, about 8-10 minutes; drain.
  3. Sauté garlic in olive oil until fragrant, then add spinach and cook until wilted, about 2-3 minutes.
  4. In a bowl, combine cooked orzo, sautéed spinach, lemon juice, and herbs.
  5. Transfer to a baking dish, crumble feta on top, and drizzle with olive oil.
  6. Bake for 20-25 minutes until feta is soft and slightly golden.
  7. Serve warm, garnished with black pepper or fresh herbs.

Notes

For variations, substitute orzo with quinoa and feta with goat cheese. Best served warm with a side salad.
