Ingredients

- 1 lb fresh carrots, peeled and cut into even-sized pieces
- 2 tbsp honey
- 2 tbsp butter
- Pinch of salt
- Fresh herbs (optional): thyme or parsley
Instructions
- Wash and peel the fresh carrots, cutting them into even-sized pieces.
- In a skillet over medium heat, melt the butter until it bubbles gently.
- Add the carrots, stirring them to coat in the butter, and sauté for about 5 minutes until they start to soften.
- Pour in the honey and add optional herbs, tossing to combine.
- Let them cook for another 10 to 15 minutes on medium-low heat, stirring occasionally to develop a glossy glaze.
- Season with a pinch of salt to taste. For extra caramelization, increase the heat for a minute or two, watching closely to prevent burning.
Notes
For a sweet twist, substitute maple syrup for honey. Coconut oil can be used instead of butter if desired.
