Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter, chilled
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 2 tbsp cornstarch
  • 1/2 tsp salt

Instructions

  1. Make the Crust: In a large bowl, combine flour, salt, and sugar. Cut in cold butter until the mixture resembles coarse crumbs. Add a few tablespoons of cold water until the dough comes together. Wrap it in plastic wrap and chill for at least an hour.
  2. Prepare the Filling: In another bowl, toss fresh blueberries with sugar, cornstarch, lemon juice, and zest. Let it sit for about 15 minutes to allow the flavors to meld.
  3. Roll Out the Dough: Roll out the chilled dough on a floured surface to fit a large baking sheet.
  4. Assemble the Pie: Lay half of the rolled-out dough in the bottom of a greased slab pan. Pour the blueberry mixture over the crust. Top with the remaining dough.
  5. Bake: Bake at 375°F for 45–55 minutes, or until the crust is golden brown and the filling is bubbling.
  6. Cool and Serve: Let the pie cool for at least 30 minutes. Serve warm or at room temperature.
