Ingredients
- Cornbread Mix
- Creamed Corn
- Sour Cream or Greek Yogurt
- Shredded Cheese (Cheddar, Monterey Jack, or Pepper Jack)
- Sautéed Onions
- Diced Bell Peppers
- Eggs

Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat some oil over medium heat. Add diced onions and bell peppers, cooking until softened, about 5-7 minutes.
- In a large mixing bowl, combine the cornbread mix, creamed corn, sour cream (or yogurt), and eggs. Stir until just combined.
- Fold in the sautéed vegetables and shredded cheese.
- Lightly grease a 9×13-inch baking dish and pour the mixture in, spreading it evenly.
- Bake for 30-35 minutes, or until the top is golden brown and a toothpick comes out clean.
- Let cool for 10-15 minutes before serving.
- Slice and serve warm, optionally drizzling with honey or melted butter.
