Description

A comforting cornbread casserole combining sweet corn, savory vegetables, and creamy cheese, perfect for family gatherings.

Ingredients

  • Cornbread Mix
  • Creamed Corn
  • Sour Cream or Greek Yogurt
  • Shredded Cheese (Cheddar, Monterey Jack, or Pepper Jack)
  • Sautéed Onions
  • Diced Bell Peppers
  • Eggs
  • Optional Add-Ins: Cooked Bacon, Sautéed Mushrooms, Green Chiles

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat some oil over medium heat. Add diced onions and bell peppers, cooking until softened, about 5-7 minutes.
  3. In a large mixing bowl, combine the cornbread mix, creamed corn, sour cream (or yogurt), and eggs. Stir until just combined.
  4. Fold in the sautéed vegetables and shredded cheese.
  5. Lightly grease a 9×13-inch baking dish and pour the mixture in, spreading it evenly.
  6. Bake for 30-35 minutes, or until the top is golden brown and a toothpick comes out clean.
  7. Let cool for 10-15 minutes before serving.
  8. Slice and serve warm, optionally drizzling with honey or melted butter.

Notes

For a vegetarian option, use flaxseed or chia seed instead of eggs. Don’t fret about missing ingredients; substitutions can work beautifully.
