- 4 cod fillets
- 1 cup panko breadcrumbs
- 1/2 cup freshly grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup butter or olive oil, melted
- 1 tablespoon fresh parsley or dill, chopped
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse and pat the cod fillets dry, seasoning them with salt and pepper.
- In a medium bowl, combine the panko breadcrumbs, grated Parmesan, minced garlic, and herbs. Drizzle in the melted butter or olive oil and stir until coated.
- Press the coating mixture onto the top of each cod fillet evenly.
- Place the baking dish in the preheated oven and bake for 15-20 minutes until golden brown and the fish flakes easily with a fork.
- Squeeze fresh lemon juice over the top just before serving.
Notes
For an added crunch, broil for the last few minutes of cooking. You can substitute cod with halibut or tilapia and panko with regular breadcrumbs in a pinch.
