- 2 tablespoons fresh orange juice
- 1 1/2 cups fresh cranberries (or dried cranberries)
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream the butter and sugar in a large bowl until light and fluffy.
- Add the egg (or flaxseed mix), orange juice, and zest. Mix until smooth.
- In another bowl, whisk the flour and salt. Gradually add this to the wet ingredients and mix until just combined.
- Fold in the cranberries gently.
- Scoop tablespoon-sized portions onto the baking sheet, spacing them 2 inches apart.
- Bake for 12-15 minutes until the edges are golden brown.
- Allow cooling on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For a gluten-free option, substitute almond flour for all-purpose flour. Don’t skip chilling the dough for optimal flavor.
