Description

Ingredients

  • 2 lbs beef (chuck roast or stew meat)
  • 2 lbs potatoes (Yukon Gold or baby potatoes)
  • 4 cloves fresh garlic, minced
  • 1/2 cup unsalted butter
  • 1 cup beef broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp fresh thyme
  • 1 tsp fresh rosemary

Instructions

  1. Prep the ingredients: Cut the beef into bite-sized chunks and wash the potatoes, cutting larger ones in half.
  2. Sear the beef (optional): Brown the beef chunks in a skillet with melted butter over medium-high heat.
  3. Combine in the slow cooker: Place the seared beef in the slow cooker, add potatoes, garlic, herbs, and pour in beef broth.
  4. Add butter: Cut remaining butter into pieces and toss over the mixture.
  5. Slow cook: Set the slow cooker on low for 6-8 hours or high for 3-4 hours.
  6. Serve and enjoy: Taste and adjust seasonings before serving.
