- 2 lbs beef (chuck roast or stew meat)
- 2 lbs potatoes (Yukon Gold or baby potatoes)
- 4 cloves fresh garlic, minced
- 1/2 cup unsalted butter
- 1 cup beef broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp fresh thyme
- 1 tsp fresh rosemary
Instructions
- Prep the ingredients: Cut the beef into bite-sized chunks and wash the potatoes, cutting larger ones in half.
- Sear the beef (optional): Brown the beef chunks in a skillet with melted butter over medium-high heat.
- Combine in the slow cooker: Place the seared beef in the slow cooker, add potatoes, garlic, herbs, and pour in beef broth.
- Add butter: Cut remaining butter into pieces and toss over the mixture.
- Slow cook: Set the slow cooker on low for 6-8 hours or high for 3-4 hours.
- Serve and enjoy: Taste and adjust seasonings before serving.
Notes
Avoid overcrowding the slow cooker and do not add extra liquid. Use high-quality beef and fresh herbs for best results.
