Ingredients

  • 2 lbs beef tips (chuck roast or sirloin)
  • 8 oz fresh cremini or button mushrooms, sliced
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1/4 cup soy sauce
  • 2 tbsp Worcestershire sauce
  • 1 tsp fresh thyme, chopped
  • 1 tsp fresh rosemary, chopped
  • Salt and pepper to taste
  • 1 tbsp cornstarch (optional, for thickening)
  • 2 tbsp cold water (optional, for thickening)

Instructions

  1. Prepare the beef by cutting it into bite-sized pieces and seasoning with salt and pepper.
  2. In a skillet, heat a little oil over medium-high heat and sear the beef tips until browned on all sides.
  3. In the same skillet, sauté the onions and garlic until softened and fragrant.
  4. Layer the beef tips, sautéed onions, mushrooms, and herbs in a slow cooker. Pour in the beef broth and both sauces.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. To thicken the gravy, mix cornstarch with cold water and stir it into the crock pot about 30 minutes before serving.
  7. Taste and adjust seasoning before serving.
  8. Serve the beef tips and gravy over mashed potatoes, rice, or your favorite side.

Notes

This dish is also adaptable; substitute beef with turkey or chicken for a lighter option, or add root vegetables for heartiness.
