- 2 lbs beef tips (chuck roast or sirloin)
- 8 oz fresh cremini or button mushrooms, sliced
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 cups low-sodium beef broth
- 1/4 cup soy sauce
- 2 tbsp Worcestershire sauce
- 1 tsp fresh thyme, chopped
- 1 tsp fresh rosemary, chopped
- Salt and pepper to taste
- 1 tbsp cornstarch (optional, for thickening)
- 2 tbsp cold water (optional, for thickening)
Instructions
- Prepare the beef by cutting it into bite-sized pieces and seasoning with salt and pepper.
- In a skillet, heat a little oil over medium-high heat and sear the beef tips until browned on all sides.
- In the same skillet, sauté the onions and garlic until softened and fragrant.
- Layer the beef tips, sautéed onions, mushrooms, and herbs in a slow cooker. Pour in the beef broth and both sauces.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- To thicken the gravy, mix cornstarch with cold water and stir it into the crock pot about 30 minutes before serving.
- Taste and adjust seasoning before serving.
- Serve the beef tips and gravy over mashed potatoes, rice, or your favorite side.
Notes
This dish is also adaptable; substitute beef with turkey or chicken for a lighter option, or add root vegetables for heartiness.
