Instructions
- Preheat your oven to 350°F (175°C). Grease or line a square baking pan with parchment paper.
- In a large bowl, whisk together the gluten-free flour blend, baking powder, baking soda, salt, and spices.
- In another bowl, combine the pumpkin puree, brown sugar, eggs (or flaxseed mixture), and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Spread the batter evenly in the prepared baking pan.
- Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- Let the bars cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar if desired before slicing.
