Ingredients

  • 1 tablespoon lemon juice
  • 4 cups romaine lettuce, chopped
  • 1 red bell pepper, sliced
  • 1 cup shredded carrots
  • 1/2 cup cucumber, diced (optional)
  • 1/2 cup snap peas (optional)
  • 2 tablespoons toasted sesame seeds
  • 1/4 cup fresh cilantro, chopped
  • 2 green onions, sliced

Instructions

  1. Season the chicken with salt and pepper and cook in a skillet over medium-high heat for 6-8 minutes per side until golden brown.
  2. In a bowl, whisk together sesame oil, soy sauce, honey, and lemon juice.
  3. Once chicken is cooked, let it cool and slice it into bite-sized pieces.
  4. In a large bowl, combine salad greens, bell peppers, carrots, and chicken. Pour dressing over the top and toss gently.
  5. Sprinkle toasted sesame seeds and fresh herbs over the salad and serve immediately or let chill for 15 minutes.
