Ingredients

- 4 medium sweet potatoes
- 4 tablespoons unsalted butter (or olive oil for vegan)
- 3 cloves fresh garlic, minced
- 2 tablespoons maple syrup
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (or crushed red pepper flakes)
- Salt and pepper to taste

Instructions
- Peeled and cut sweet potatoes into uniform chunks.
- Boil in a large pot of water for about 15-20 minutes until fork-tender.
- Drain the potatoes and return to the pot over low heat to evaporate moisture.
- Add butter or olive oil, minced garlic, maple syrup, and spices. Mash until creamy but still slightly chunky.
- Taste and adjust sweetness or heat as desired.
- Transfer to a serving dish and garnish with fresh herbs and a drizzle of olive oil or maple syrup.
- Serve warm and enjoy!
