- 4 chicken thighs or breasts
- 1/2 cup white vinegar or apple cider vinegar
- 1/4 cup low-sodium soy sauce
- 4 cloves minced garlic
- 1–2 chipotle peppers in adobo sauce, chopped
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 1 bay leaf
- 1 onion, chopped
- 1 tablespoon sugar (or to taste)
- 1 cup water or chicken broth
- Oil for cooking
Instructions
- Marinate the chicken in a mixture of vinegar, soy sauce, minced garlic, and chipotle peppers for at least 30 minutes.
- In a large skillet, heat oil over medium heat and sauté chopped onions until translucent.
- Remove the chicken from the marinade (keeping the marinade), sear the chicken in the skillet for about 3-4 minutes per side until golden brown.
- Pour the reserved marinade over the chicken, add the bay leaf and oregano, cover, and simmer for 30-40 minutes until tender.
- During the last 10 minutes, remove the lid to thicken the sauce, adjusting seasoning as needed.
- Let the adobo rest for a few minutes before serving to allow flavors to meld.
Notes
Serve with rice, warm tortillas, or a fresh salsa for a complete meal. Consider using low-sodium soy sauce to control salt levels.
