Description

A flavorful and aromatic dish that combines the richness of chicken with a tangy and smoky adobo sauce, perfect for family gatherings.


Ingredients

  • 4 chicken thighs or breasts
  • 1/2 cup white vinegar or apple cider vinegar
  • 1/4 cup low-sodium soy sauce
  • 4 cloves minced garlic
  • 12 chipotle peppers in adobo sauce, chopped
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 bay leaf
  • 1 onion, chopped
  • 1 tablespoon sugar (or to taste)
  • 1 cup water or chicken broth
  • Oil for cooking

Instructions

  1. Marinate the chicken in a mixture of vinegar, soy sauce, minced garlic, and chipotle peppers for at least 30 minutes.
  2. In a large skillet, heat oil over medium heat and sauté chopped onions until translucent.
  3. Remove the chicken from the marinade (keeping the marinade), sear the chicken in the skillet for about 3-4 minutes per side until golden brown.
  4. Pour the reserved marinade over the chicken, add the bay leaf and oregano, cover, and simmer for 30-40 minutes until tender.
  5. During the last 10 minutes, remove the lid to thicken the sauce, adjusting seasoning as needed.
  6. Let the adobo rest for a few minutes before serving to allow flavors to meld.

Notes

Serve with rice, warm tortillas, or a fresh salsa for a complete meal. Consider using low-sodium soy sauce to control salt levels.
