Description

A hearty and flavorful beef and pepper pasta dish that celebrates family and connection with every bite.


Ingredients

  • 1 lb lean ground beef
  • 8 oz penne or fusilli pasta
  • 2 mixed bell peppers, sliced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup tomato sauce or diced tomatoes
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente, about 8-10 minutes. Reserve about 1 cup of pasta water before draining.
  2. In a large skillet over medium heat, heat olive oil and sauté diced onions and minced garlic until onions are translucent.
  3. Add ground beef, breaking it apart, and cook until browned, about 5-7 minutes. Season with salt, pepper, oregano, and basil.
  4. Stir in the sliced bell peppers and cook until tender, about 5-7 minutes.
  5. Add the tomato sauce or diced tomatoes, mixing well, and simmer for about 5 minutes, adding reserved pasta water for desired consistency.
  6. Toss in cooked pasta until well combined, adjust seasoning, and serve hot topped with fresh herbs if desired.

Notes

Feel free to substitute ground beef with turkey or chicken for a lighter option, or use mushrooms and zucchini for a vegetarian version.
