Ingredients

- 1 lb lean ground beef
- 8 oz penne or fusilli pasta
- 2 mixed bell peppers, sliced
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 cup tomato sauce or diced tomatoes
- 1 tsp dried oregano
- 1 tsp dried basil
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook the pasta in a large pot of salted boiling water until al dente, about 8-10 minutes. Reserve about 1 cup of pasta water before draining.
- In a large skillet over medium heat, heat olive oil and sauté diced onions and minced garlic until onions are translucent.
- Add ground beef, breaking it apart, and cook until browned, about 5-7 minutes. Season with salt, pepper, oregano, and basil.
- Stir in the sliced bell peppers and cook until tender, about 5-7 minutes.
- Add the tomato sauce or diced tomatoes, mixing well, and simmer for about 5 minutes, adding reserved pasta water for desired consistency.
- Toss in cooked pasta until well combined, adjust seasoning, and serve hot topped with fresh herbs if desired.
Notes
Feel free to substitute ground beef with turkey or chicken for a lighter option, or use mushrooms and zucchini for a vegetarian version.
