Ingredients

  • ½ cup fresh watermelon juice
  • 2 tablespoons sugar (or honey)
  • Cornstarch for dusting

Instructions

  1. Blend 1 cup of fresh watermelon until smooth, then strain to get juice.
  2. In a bowl, combine sticky rice flour, watermelon juice, and sugar, stirring until smooth.
  3. Pour the mixture into a lined heatproof dish and steam for about 20 minutes.
  4. Let cool, dust hands with cornstarch, take a small piece of mochi, and wrap it around a watermelon cube.
  5. Refrigerate for 1 hour to set, then serve dusted with cornstarch or your choice of toppings.

Notes
