Instructions
- Blend 1 cup of fresh watermelon until smooth, then strain to get juice.
- In a bowl, combine sticky rice flour, watermelon juice, and sugar, stirring until smooth.
- Pour the mixture into a lined heatproof dish and steam for about 20 minutes.
- Let cool, dust hands with cornstarch, take a small piece of mochi, and wrap it around a watermelon cube.
- Refrigerate for 1 hour to set, then serve dusted with cornstarch or your choice of toppings.
Notes
Be patient while cooling the mochi to achieve the perfect texture, and ensure cornstarch is available to prevent stickiness.
