Instructions

- In a separate bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg to the creamed mixture and beat until thoroughly combined.
- Slowly add the dry mixture to the wet ingredients, mixing until just combined.
- Gently fold in the chopped peaches and optional nuts.
- Scoop generous amounts of dough onto the prepared baking sheet, leaving space between each cookie.
- Bake for 12 to 15 minutes, until edges are lightly golden.
- Allow cookies to cool on the baking sheet before transferring to a wire rack and drizzling with a vanilla glaze if desired.
