Ingredients

  • 4 cloves fresh garlic, minced
  • 8 ounces mushrooms, sliced (baby bella or cremini recommended)
  • 1 bell pepper, diced (red, yellow, or green)
  • 1 medium zucchini, sliced
  • 1 onion, chopped
  • 2 tablespoons olive oil or butter
  • Fresh herbs (basil, parsley, or thyme), chopped
  • Salt and pepper, to taste

Instructions

  1. Preheat a large skillet over medium heat and add olive oil or butter.
  2. Add minced garlic and chopped onion to the skillet, cooking until the onions are translucent and fragrant (about 2-3 minutes).
  3. Toss in the sliced mushrooms, stirring to coat in the garlic and onion mixture, and cook for an additional 5 minutes.
  4. Add bell peppers and zucchini, seasoning with salt and pepper. Sauté until the vegetables are tender yet vibrant (about 5-7 minutes).
  5. Stir in freshly chopped herbs right before serving.
  6. Serve hot, either on a dish or keep warm in the skillet.

Notes

For variations, substitute mushrooms with chopped eggplant or tofu, and adjust fresh herbs to your preference. Don’t overload the skillet while cooking.
