Instructions
- Preheat oven to 350°F (175°C) and prepare baking sheets with parchment paper.
- Cream together the unsalted butter and sugars until light and fluffy (2-3 minutes).
- Add the egg yolks, lemon zest, and vanilla extract; mix until just combined.
- In another bowl, whisk together flour, baking soda, and salt. Gradually mix into wet ingredients until a cohesive dough forms.
- Scoop rounded tablespoons of dough onto prepared baking sheets, leaving space between each.
- Sprinkle turbinado sugar on top of each cookie.
- Bake for 10-12 minutes until edges are golden. Cool on baking sheet for a few minutes before transferring to a wire rack.
Notes
For a dairy-free option, substitute coconut oil for butter. You can also use lime or orange zest for a different citrus flavor.
