Description

A warm and cozy chicken soup with tender potatoes, perfect for chilly evenings.


Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 2 medium Yukon Gold potatoes, diced
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 4 cups chicken broth
  • Fresh thyme, rosemary, and parsley
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Dice onions, carrots, and potatoes into bite-sized pieces. Mince the garlic and gather herbs.
  2. Heat olive oil in a large pot over medium heat. Sauté onions for about 5 minutes until translucent. Add garlic and carrots; cook for an additional 2–3 minutes.
  3. Add chicken pieces to the pot, season with salt and pepper, and sauté until golden brown on all sides, about 5 minutes.
  4. Pour in chicken broth and add diced potatoes along with herbs. Bring to a slight boil, then reduce heat and let it simmer for 20–30 minutes until chicken is cooked through and potatoes are tender.
  5. Remove cooked chicken, shred it and return it to the soup. Adjust seasoning to taste.
  6. Add fresh parsley or thyme right before serving. Serve warm with crusty bread or buttery biscuits.

Notes

For a vegetarian version, substitute chicken with tofu or chickpeas and use vegetable broth.
