A warm and cozy chicken soup with tender potatoes, perfect for chilly evenings.
Ingredients

- 1 lb boneless chicken (breast or thighs)
- 2 medium Yukon Gold potatoes, diced
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 4 cups chicken broth
- Fresh thyme, rosemary, and parsley
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Dice onions, carrots, and potatoes into bite-sized pieces. Mince the garlic and gather herbs.
- Heat olive oil in a large pot over medium heat. Sauté onions for about 5 minutes until translucent. Add garlic and carrots; cook for an additional 2–3 minutes.
- Add chicken pieces to the pot, season with salt and pepper, and sauté until golden brown on all sides, about 5 minutes.
- Pour in chicken broth and add diced potatoes along with herbs. Bring to a slight boil, then reduce heat and let it simmer for 20–30 minutes until chicken is cooked through and potatoes are tender.
- Remove cooked chicken, shred it and return it to the soup. Adjust seasoning to taste.
- Add fresh parsley or thyme right before serving. Serve warm with crusty bread or buttery biscuits.
Notes
For a vegetarian version, substitute chicken with tofu or chickpeas and use vegetable broth.
