- 8 oz pasta (penne or fusilli)
- 4 cups fresh spinach
- 2 cups fresh diced tomatoes
- 3 cloves garlic, minced
- 1 medium onion, diced
- 1 cup heavy cream
- 1 cup grated Parmesan or mozzarella cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Red pepper flakes (optional)
- Fresh basil or parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat, add onions and garlic, and sauté until the onions are translucent.
- Add fresh diced tomatoes and simmer for 3-4 minutes until softened.
- Fold in the spinach and allow to wilt for a couple of minutes.
- Pour in the heavy cream, stir, and add the pasta along with enough water or broth to cover.
- Bring to a gentle boil, then reduce to a simmer and cook pasta according to package instructions (10-12 minutes).
- Once cooked, remove from heat and mix in cheese until melted. Adjust seasoning and finish with fresh herbs before serving.
Notes
Feel free to substitute kale for spinach or add additional vegetables like bell peppers or mushrooms for extra flavor and nutrition.
