- 2 lbs Beef Short Ribs
- 1 large Onion, diced
- 4 cloves Garlic, minced
- 3 Carrots, chopped
- 2 Celery stalks, chopped
- 2–3 medium Potatoes, diced
- 1 cup Dry Red Wine
- 4 cups Beef Broth
- 2 tsp Fresh Thyme
- 2 Bay Leaves
- Salt and Pepper to taste
- Fresh Parsley for garnish
Instructions
- Season the short ribs with salt and pepper, then sear them in a heavy-bottomed skillet over medium-high heat until browned.
- Remove the ribs, then sauté onions, garlic, and celery in the same skillet until soft and fragrant.
- Deglaze the pan with red wine, scraping up browned bits, and simmer for 3-4 minutes.
- Return the ribs to the pot, add carrots and potatoes, then pour in beef broth to cover. Add thyme and bay leaves.
- Bring to a gentle simmer, cover, and cook on low heat for 2.5 to 3 hours until tender.
- Taste and adjust seasoning before serving. Garnish with fresh parsley and serve with crusty bread or creamy mashed potatoes.
Notes
Allow the stew to cool and rest after cooking for better flavor melding. This stew can be frozen and reheated beautifully.
