- 1 lb Boneless chicken (breast or thighs), diced
- 8 oz Pasta (penne or rotini)
- 2 cups Fresh broccoli florets
- 1 cup Heavy cream
- 1/2 cup Freshly grated Parmesan cheese
- 3 cloves Fresh garlic, minced
- 1 tsp Italian herbs (oregano, thyme, and parsley)
- 2 tbsp Unsalted butter
- Salt and pepper to taste
Instructions
- Cook the Pasta: Boil a large pot of salted water and cook your pasta of choice until al dente. Reserve about a cup of pasta water before draining.
- Sauté the Chicken: In a large skillet, melt butter over medium heat. Add diced chicken, season with salt and pepper, and sauté until golden brown (about 5-7 minutes). Remove and set aside.
- Cook the Broccoli: In the same skillet, add more butter and minced garlic. Sauté until fragrant, then add broccoli florets and a splash of water. Cover to steam until tender but crisp.
- Combine and Sauce: Add cooked pasta and chicken back to the skillet. Pour in cream and stir, using reserved pasta water to adjust the sauce texture. Mix in grated Parmesan until melted.
- Season and Serve: Stir in Italian herbs, adjust seasoning to taste, and serve hot garnished with extra Parmesan and fresh herbs.
Notes
For a variation, consider using shrimp instead of chicken or whole wheat pasta for a healthier twist.
