Description

Ingredients

  • 1 lb Boneless chicken (breast or thighs), diced
  • 8 oz Pasta (penne or rotini)
  • 2 cups Fresh broccoli florets
  • 1 cup Heavy cream
  • 1/2 cup Freshly grated Parmesan cheese
  • 3 cloves Fresh garlic, minced
  • 1 tsp Italian herbs (oregano, thyme, and parsley)
  • 2 tbsp Unsalted butter
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Boil a large pot of salted water and cook your pasta of choice until al dente. Reserve about a cup of pasta water before draining.
  2. Sauté the Chicken: In a large skillet, melt butter over medium heat. Add diced chicken, season with salt and pepper, and sauté until golden brown (about 5-7 minutes). Remove and set aside.
  3. Cook the Broccoli: In the same skillet, add more butter and minced garlic. Sauté until fragrant, then add broccoli florets and a splash of water. Cover to steam until tender but crisp.
  4. Combine and Sauce: Add cooked pasta and chicken back to the skillet. Pour in cream and stir, using reserved pasta water to adjust the sauce texture. Mix in grated Parmesan until melted.
  5. Season and Serve: Stir in Italian herbs, adjust seasoning to taste, and serve hot garnished with extra Parmesan and fresh herbs.

Notes

For a variation, consider using shrimp instead of chicken or whole wheat pasta for a healthier twist.
