- 2 boneless chicken breasts or thighs
- 1 cup heavy cream
- 4 cloves fresh garlic, minced
- 8 oz baby bella mushrooms, sliced
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese (optional)
- 1 tsp Italian herbs (oregano, thyme)
- Salt and pepper, to taste
- Olive oil for cooking
- 1/2 cup chicken broth or white wine
Instructions
- Prepare all ingredients for cooking.
- In a large skillet over medium-high heat, add olive oil. Season the chicken with salt and pepper and cook until golden brown, about 6-7 minutes per side. Remove and set aside.
- In the same skillet, lower the heat to medium, add more oil if needed, and sauté minced garlic for about 30 seconds. Then add sliced mushrooms, seasoning with salt, cooking until golden and tender.
- Deglaze the skillet with chicken broth or wine, scraping up any browned bits, and let reduce. Then add heavy cream and simmer gently.
- Add the chicken back to the skillet along with any juices, stir in spinach, and sprinkle with Parmesan if using. Cover and simmer for another 5 minutes.
- Adjust seasoning as necessary, serve over pasta or rice, and enjoy!
Notes
Add a squeeze of lemon juice before serving for added brightness. Feel free to incorporate additional veggies like bell peppers or zucchini.
