- 1 lb ground beef (or ground turkey/chicken)
- 2 cups chopped vegetables (carrots, peas, mushrooms)
- 1 cup shredded sharp cheddar cheese
- 2 cups peeled and chopped potatoes (Yukon gold or russet)
- 1/2 cup milk
- 2 tbsp butter
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Your favorite gravy or beef broth
- Fresh herbs for garnish (optional)
Instructions
- Brown the ground beef in a skillet over medium heat, adding chopped onions and garlic until fragrant.
- Chop your vegetables and mix them into the meat mixture.
- Transfer the meat and vegetable mixture into the slow cooker. Pour in gravy or beef broth.
- Boil the peeled potatoes until fork-tender, then mash with butter, milk, salt, and pepper until creamy.
- Spread the mashed potatoes over the meat and vegetable mix and top with more cheese if desired.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Let sit for a few minutes before serving. Garnish with fresh herbs if desired.
Notes
For a vegetarian option, use lentils or quinoa instead of meat and vegan cheese alternatives.
