- 1 lb ground beef (lean)
- 8 oz pasta (spaghetti or penne)
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 4 cloves garlic, minced
- 1 medium onion, diced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
Instructions
- Boil salted water in a large pot and cook pasta according to package instructions until al dente. Reserve some pasta water, drain, and set aside.
- In a large skillet, heat olive oil over medium heat. Add chopped onions and minced garlic, and sauté until onions are translucent, about 3 minutes.
- Move onions to the side and add ground beef, browning it while breaking apart until fully cooked. Season with salt, pepper, oregano, and basil.
- Add sliced bell peppers and cook until softened, about 5 minutes.
- Mix in the cooked pasta and add reserved pasta water, stirring until combined.
- Taste and adjust seasoning as needed.
- Serve warm with a drizzle of olive oil and freshly grated Parmesan.
Notes
For added nutrition, consider mixing in spinach at the end, or substitute bell peppers with zucchini or mushrooms.
