Description

A comforting twist on classic meatloaf featuring ground turkey and sweet-tart cranberries, topped with a rich gravy.


Ingredients

  • 1 lb ground turkey
  • 1 cup fresh cranberries
  • 1 cup bread crumbs
  • 1 egg
  • 1/2 cup milk
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tsp fresh thyme, chopped
  • 2 tsp fresh rosemary, chopped
  • 2 tbsp olive oil
  • 2 tbsp butter (for gravy)
  • 2 tbsp flour (for gravy)
  • 2 cups turkey broth (for gravy)
  • Salt and pepper to taste
  • Worcestershire sauce to taste (for gravy)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil and sauté onions and garlic until translucent.
  3. In a bowl, combine ground turkey, sautéed onions and garlic, cranberries, bread crumbs, egg, milk, and herbs. Mix gently.
  4. Transfer the mixture into a parchment-lined loaf pan, shaping it into a loaf.
  5. Bake for 60-75 minutes until the internal temperature reaches 165°F (74°C).
  6. For the gravy, melt butter in a saucepan, whisk in flour, then gradually add turkey broth, stirring until thickened. Season with salt, pepper, and Worcestershire sauce.
  7. Let the meatloaf rest for 10 minutes, slice, and serve with gravy.

Notes

For a vegan option, substitute the egg with a flax egg. You can also use dried cranberries if fresh ones are unavailable.
