A comforting twist on classic meatloaf featuring ground turkey and sweet-tart cranberries, topped with a rich gravy.

- 1 lb ground turkey
- 1 cup fresh cranberries
- 1 cup bread crumbs
- 1 egg
- 1/2 cup milk
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 tsp fresh thyme, chopped
- 2 tsp fresh rosemary, chopped
- 2 tbsp olive oil
- 2 tbsp butter (for gravy)
- 2 tbsp flour (for gravy)
- 2 cups turkey broth (for gravy)
- Salt and pepper to taste
- Worcestershire sauce to taste (for gravy)
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, heat olive oil and sauté onions and garlic until translucent.
- In a bowl, combine ground turkey, sautéed onions and garlic, cranberries, bread crumbs, egg, milk, and herbs. Mix gently.
- Transfer the mixture into a parchment-lined loaf pan, shaping it into a loaf.
- Bake for 60-75 minutes until the internal temperature reaches 165°F (74°C).
- For the gravy, melt butter in a saucepan, whisk in flour, then gradually add turkey broth, stirring until thickened. Season with salt, pepper, and Worcestershire sauce.
- Let the meatloaf rest for 10 minutes, slice, and serve with gravy.
Notes
For a vegan option, substitute the egg with a flax egg. You can also use dried cranberries if fresh ones are unavailable.
