Ingredients

  • 1 cup Greek yogurt
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Boneless chicken breasts or thighs
  • Fresh herbs (parsley, dill, or cilantro)

Instructions

  1. In a bowl, whisk together Greek yogurt, lemon juice, minced garlic, olive oil, smoked paprika, cumin, salt, and pepper until smooth.
  2. Trim excess fat from chicken and pat dry with paper towels.
  3. Add chicken to the yogurt mixture, ensuring it’s thoroughly coated. Cover or transfer to a resealable bag.
  4. Marinate in the refrigerator for at least 1 hour, preferably overnight.
  5. Preheat the grill to medium-high heat or oven to 400°F (200°C).
  6. If grilling, cook chicken for 6-7 minutes on each side until internal temperature reaches 165°F (75°C). If baking, arrange on a baking sheet and bake for 20-25 minutes or until cooked through.
  7. Let chicken rest for 5 minutes before slicing and serve with side dishes.

Notes

For a vegetarian version, substitute chicken with tofu or mushrooms. For dairy-free, use almond or coconut yogurt.
